Our 1st Week on the EoE Elimination Diet: recipes, advice, photos and more
This week is our first full week on the EoE elimination diet. Amy doesn’t need to eliminate any foods from her diet. However, for David’s safety and our cooking ease we’re going to be eating the same foods. Then we can start to determine what food(s) have been causing David’s esophagitis.
In the table below you’ll see that we have planned out our meals for the week (breakfast, lunch and dinner) and listed the number of servings for each meal of the day. We will be making some of the food in batches, for example the sweet and sour wings with a side of mashed sweet potatoes and sautéed spinach. We’ll also make some of the food on a daily basis, for example the strawberry banana smoothies. Every time we create a new dish we will write an accompanying recipe post so that you can make them too.
